New Chesy restaurant to open Monday

CHESAPEAKE — The Hillbilly Hot Dog specialty restaurant will open at its new Chesapeake location Monday at 10:30 a.m. at the former Peparoni’s Pizza Drive-In.
Headquartered in Lesage, W.Va., outside of Huntington, Hillbilly Hot Dogs focuses on hot dogs in an Appalachian motif setting.
The menu created by owners, Sharie and Sonny Knight, features Chuck’s Junkyard Dog, Man of Fire Dog and Pistol Pete’s Chicken Parmesan.
Recently the restaurant was ranked 15th on the Travel Channel’s 101 Tastiest Places to Chow Down.
Sonny Knight said he is getting positive feedback from village residents about the opening.
“We have had an outpouring from the people,” Knight said. “They say, ‘We can’t wait.’”
The restaurant will be managed by the Knights’ son, Brandon Swallow, and will employ five at the beginning. Knight expects three more to be added to the staff later on.
The Knights plan to open a second location in Lawrence County at the former Freezette restaurant at Proctorville.
That will be a Hillbilly Express, a drive through-type restaurant, which is expected to open by the end of July.
